Trying our hand at ice cream making and flavour development, the Made Manifest team created new flavours at a Moonmilk ice cream making party.

The black sesame raspberry flavour was a success that it got added to the rotation at the shop!

Our Response

Trying our hand at ice cream making and flavour development, the Made Manifest team created new flavours at a Moonmilk ice cream making party.

The black sesame raspberry flavour was a success that it got added to the rotation at the shop!

The Opportunity

Unlike most of our case studies, this was not a client project - rather, it was a self initiated design experiment for the studio. Linn’s love of ice cream is well known - she even has a large ice cream tattoo! 

For one of our team socials, we decided to try our hand at ice-cream making at the wonderful Moonmilk ice cream shop, run by Elysia Leung and Sarah Davignon. 

With two decades of experience at bakeries and ice cream shops in Toronto, Moonmilk is their glorious imagining of a fun and delicious ice cream parlour at 1695 Dundas St. West, Toronto, for scoops, pints, slices, cake, milkshakes, cookies, and more celestial desserts & treats.

Our Approach

With Sarah as our trusted guide, and our ice cream making party booked, our first step was to figure out the flavour profiles we wanted to work with. 

Seden was thinking vanilla as a base with sesame paste, and a tart mix in. Linn and Michelle were thinking along the lines of nutty, chocolatey, malty, pistachio-ey. We let Sarah know so she could get the supplies needed and make our base ahead of time.

Day of our ice cream making party, we learned all about making an ice cream base and flavouring it, and layering in our mix-ins after the machine had churned the ice cream to a soft-serve texture. We asked a million questions about things like the cost of an industrial ice cream machine to the difference between gelato and sorbet to why European dairy is easier to digest for some people! 

We also got to taste every single flavour on the Moonmilk rotation that day which was thrilling to say the least. The mango sorbet is one of the best we’ve ever tasted!

Project Outcomes

We made two flavours of ice cream - a malted chocolate with espresso caramel and bits of whopper, and a black sesame with raspberry jam ripple. 

The team learned so much and had a lot of fun - we definitely recommend a Moonmilk ice cream party as teambuilding or for any celebration. Sarah was a wonderful host and teacher! 

Best of all, the black sesame raspberry was such a success that it has been added to the Moonmilk rotation! It was truly thrilling to go back a few weeks later and see it sitting in the ice cream display case. 

And now we can say that Made Manifest ice cream has been featured in ice cream shops!
